Honico Honey and Cocoa Muffins

These soft, domed muffins are sweetened entirely by Honico Chocolate Spread & Beverage — no added sugar at all. The honey in the spread caramelises beautifully in the oven, creating a lightly glossy top and a moist, flavourful crumb. They are simple enough for a weekday morning and impressive enough to share.

What you need

  • 4 tbsp Honico Chocolate Spread & Beverage
  • 1½ cups plain flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 2 eggs
  • ½ cup milk
  • 4 tbsp coconut oil, melted
  • 1 tsp vanilla extract

How to make it

  1. Preheat your oven to 180°C and line a muffin tin with paper cases.
  2. Whisk the eggs, milk, coconut oil, vanilla and Honico Chocolate Spread & Beverage together until smooth.
  3. Sift the flour, baking powder, baking soda and salt into a separate bowl.
  4. Fold the wet ingredients into the dry ingredients — stop as soon as it is just combined. Do not overmix or the muffins will be dense.
  5. Divide the batter between the cases, filling each about two-thirds full.
  6. Bake for 18 to 20 minutes until risen and a skewer comes out clean.
  7. Cool in the tin for 5 minutes, then transfer to a rack. Drizzle warm Honico Chocolate Spread & Beverage over the tops while they are still warm.
