Honico Don Chocolate Crêpes

Thin, delicate and made to be filled

These chocolate crêpes are lighter and more pliable than you might expect — and that is largely thanks to the tigernut in Honico Don, which adds a natural creaminess to the batter. They are thin, delicate and beautifully chocolatey, and they make an exceptional breakfast or dessert when filled with Honico Chocolate Spread & Beverage and fresh strawberries. One batch goes fast, so consider doubling it.

What you need

  • 2 tbsp Honico Don
  • 1 cup plain flour
  • 2 eggs
  • 300ml milk
  • 1 tbsp melted butter, plus extra for the pan
  • 1 tbsp raw honey
  • Pinch of salt
  • To fill: Honico Chocolate Spread & Beverage and fresh fruit

How to make it

  1. Add all the batter ingredients to a blender and blend until completely smooth. Leave to rest for 15 minutes — this relaxes the gluten and gives you a more tender crêpe.
  2. Heat a non-stick pan over medium-high heat and brush lightly with melted butter.
  3. Pour in a small ladleful of batter and immediately swirl the pan to coat it in a thin, even layer.
  4. Cook for about 1 minute until the edges begin to lift, then flip and cook for a further 30 seconds.
  5. Stack on a warm plate and repeat with the remaining batter.
  6. Fill each crêpe with Honico Chocolate Spread & Beverage and fresh fruit, then fold into quarters or roll and serve.

Honico tip

The first crêpe is almost always a test crêpe — it seasons the pan and is rarely the prettiest. Eat it immediately in the kitchen while it is hot and consider it the cook’s reward for all the effort. The rest will be perfect.
