Honico Don Chocolate Pancakes

Thin, delicate and made for toppings

These chocolate pancakes are lighter and softer than you might expect — the tigernut in Honico Don adds a natural creaminess to the batter that makes all the difference. They are thin, delicate and beautifully chocolatey, and they make an exceptional breakfast or dessert topped with Honico Chocolate Spread & Beverage and fresh fruit.

Makes 8 pancakes — Ready in 25 minutes — Breakfast or Dessert

What you need:

  • 2 tbsp Honico Don
  • 1 cup plain flour
  • 2 eggs
  • 300ml milk
  • 1 tbsp melted butter or groundnut oil, plus extra for the pan
  • 1 tbsp raw honey or sugar
  • Pinch of salt
  • To serve: Honico Chocolate Spread & Beverage and fresh fruit such as banana, mango or strawberries

How to make it:

  1. Put all the batter ingredients into a blender and blend until completely smooth. Leave to rest for 15 minutes — this makes the pancakes more tender.
  2. Heat a non-stick pan or a well-seasoned frying pan over medium-high heat and brush lightly with oil.
  3. Pour in a small ladleful of batter and immediately swirl the pan to spread it into a thin, even layer.
  4. Cook for about 1 minute until the edges begin to lift and look dry, then flip and cook for a further 30 seconds.
  5. Stack on a warm plate and repeat with the remaining batter.
  6. Serve each pancake with a spread of Honico Chocolate Spread & Beverage and fresh fruit, then fold or roll and serve immediately.

Honico tip: The first pancake is almost always a test one — it seasons the pan and is rarely the prettiest. Eat it immediately in the kitchen while it is hot. Consider it the cook’s reward and let the rest be perfect.
